Name: Sarah Moffat
Profession: Hotel maid (She used to be a houseparlor maid but then the lord sold the estate.)
Height: 5' 2" (She's a little taller than me)
Build: um...wait, Cora, what do they mean by build?
Age: Sarah is 24. I know this one.
Eye Color: I think they're green, no grey. Wait, Cora, are they blue?
Hair: brown, though it sort of changes in the light
Anything Odd?: Sarah can tell fortunes. And she says her mother was a gypsy princess. Also, Cora always seems confused when Caruthers says he likes Sarah. Not sure if that's important.  
Public Knowledge: Sarah has worked here longer than I have, back when this was a lord's house. She and Caruthers get on well, and she loves telling Tobey all about her gyspy mother. She says she can put a curse on us, so I wouldn't cross her if I were you. She's excellent at sewing though, which is helpful when guests wear through their clothes. Oh and Sarah likes being friendly with male guests. She says they bring "variety to our lives."
